Herby Fish Bites (Printable Recipe)

# What You’ll Need:

→ For the Salmon Balls

01 - 1 lb (450g) skinless fresh salmon fillet
02 - 1/4 cup finely chopped fresh parsley
03 - 1/4 cup finely chopped fresh cilantro
04 - 1/2 cup breadcrumbs (swap with almond flour if you can't eat gluten)
05 - 1 large egg
06 - 2 cloves garlic, crushed
07 - 1 tsp smoked paprika
08 - 1 tsp grated lemon peel
09 - Salt and black pepper, as needed
10 - 2 tbsp olive oil for cooking

→ For the Creamy Avocado Cilantro Sauce

11 - 1 ripe avocado
12 - 1/4 cup chopped fresh cilantro
13 - 1/4 cup Greek yogurt (try sour cream for extra creaminess)
14 - 2 tbsp fresh lime juice
15 - 1 clove garlic, crushed
16 - Salt and pepper, as needed

# Step-by-Step Directions:

01 - Cut the salmon into tiny pieces or briefly blend in a food processor until chunky. In a big bowl, mix the chopped salmon with parsley, cilantro, breadcrumbs, egg, crushed garlic, smoked paprika, lemon peel, salt, and pepper. Stir everything together until it's all combined.
02 - Grab small amounts of the mixture and roll into 2-inch balls. You'll end up with about 12-14 balls depending on how big you make them.
03 - Warm up olive oil in a big pan over medium heat. Put in the salmon balls and cook them for around 3-4 minutes on each side until they turn golden brown and are fully cooked. Take them out and put aside.
04 - Put the avocado, cilantro, Greek yogurt, lime juice, garlic, salt, and pepper in a food processor. Blend it all up until it's smooth and creamy. Try a bit and add more seasoning if needed.
05 - Put the salmon balls on a plate with the avocado cilantro sauce poured over or served on the side for dipping. They're best eaten right away but you can keep leftovers in the fridge.

# Additional Notes:

01 - Always pick fresh salmon for the tastiest results. Wild-caught salmon tastes better and has more health perks.
02 - You can jazz up the avocado sauce by adding some jalapeño for heat or a bit of honey for sweetness.
03 - Instead of using a pan, try cooking these salmon balls on a BBQ for smoky flavor. Just oil them up and cook on medium heat.
04 - If you don't eat gluten, just swap out the breadcrumbs for almond flour.
