Warm up your oven to 350°F. Grab an 8x8 baking dish and either coat it with cooking spray or put down some parchment paper so nothing sticks.

Take a large bowl and mix your oats, baking powder, cinnamon, and salt together until they're all blended.

Add milk, maple syrup, eggs, melted coconut oil, and vanilla. Stir until everything's combined. Don't stress if it seems too liquid - that's exactly right.

Carefully stir in about ½ cup blueberries. Dump the mixture into your baking dish, then scatter the leftover ¼ cup blueberries on the surface.

Pop it in the oven for around 35-40 minutes. You'll know it's finished when the middle feels firm to a light touch. Let it sit for a bit before you cut and serve it.
