Silky Chicken and Rice Dish (Printable Recipe)

# What You’ll Need:

→ For the Casserole

01 - 1 cup (100g) shredded mozzarella or Parmesan cheese (optional, for topping)
02 - 4 boneless, skinless chicken breasts (roughly 1.5 lbs or 680g)
03 - 1 packet (1 oz/28g) Italian dressing mix
04 - Fresh parsley, chopped (optional, for garnish)
05 - 1 can (10.5 oz/300g) cream of chicken soup
06 - Salt and pepper to taste
07 - 1/2 cup (120ml) dry white wine (optional, or just use extra chicken broth)
08 - 2 cups (400g) uncooked white rice
09 - 1/2 tsp garlic powder
10 - 1 block (8 oz/225g) cream cheese, softened
11 - 1 cup (240ml) chicken broth
12 - 1 can (10.5 oz/300g) cream of mushroom soup

# Step-by-Step Directions:

01 - Turn your oven on to 350°F (175°C). Butter a 9×13-inch (23×33 cm) baking dish and lay the uncooked rice flat on the bottom.
02 - Sprinkle the chicken breasts with a bit of salt, pepper, and garlic powder. Put them right on top of your rice layer.
03 - Grab a pot and mix your mushroom soup, chicken soup, broth, wine (if you want it), cream cheese, and the Italian dressing packet. Warm it up, stirring until everything's smooth and the cream cheese has completely melted.
04 - Dump your sauce all over the chicken and rice. Cover the whole thing tightly with foil so it doesn't dry out.
05 - Stick it in the hot oven for about 45-50 minutes. You'll know it's done when the chicken reaches 165°F/74°C inside and the rice isn't crunchy anymore.
06 - Take off the foil, scatter cheese on top if you're using it, and pop it back in for 5-7 minutes until the cheese gets all melty and golden.
07 - Let it sit for 5 minutes before you dig in. Throw some parsley on top if you're feeling fancy.

# Additional Notes:

01 - Want more flavor? Try brown rice or wild rice instead, but you'll need to adjust your cooking time and add more liquid.
02 - Toss in some sliced mushrooms, broccoli bits, or peas to make it healthier and more interesting.
03 - Leftovers stay good in the fridge for about 3 days if you keep them in a sealed container. Just warm them up when you're ready.
04 - You can put this together a day early and keep it in the fridge. Just add 10 more minutes to the cooking time when you're ready to bake it.
